  Cream of Chicken Marsala

2 Tb. Butter
1 Tb. oil
4 chicken breast
4 slices mozzarella cheese
12 capers
4 flat anchovy fillets
1 Tb. chopped parsley
1 clove garlic, minced
3 Tb. marsala
2/3 cup whipping cream
salt & pepper
Heat butter and oil over medium-high heat, add chicken cook until chicken is deep golden brown. Remove chicken top with cheese slice, capers & anchovies. Sprinkle with parsley, broil until cheese melts.
Add garlic to drippings heat 30 seconds. Stir in marsala wine, 45 seconds. Stir in cream & cook uncovered until slightly thickened, about 3 minutes, spoon over chicken.
