2 sm zucchini
1 can whole peeled tomatoes
1 pd red snapper or cod, bass
1/4 cup butter plus 1 Tb butter
2 Tb olive oil
1 Tb chopped fresh basil or 3/4 tsp dried
1/4 tsp oregano
1 sprig fresh rosemary or 1/4 tsp dried
2 Tb breadcrumbs
2 tsp lemon juice

Heat oven to 400* - Cut zucchini crosswise into 1/4 inch thick slices. Press tomatoes and their liquid through sieve into bowl; discard seeds. Pat fish dry.
Heat 1/4 cup butter, add fish fillets; cook turning once until fish is slightly brown, 1 to 2 minutes. Remove fish to greased shallow baking dish.
Add oil to remaining butter, add zucchini S & P, rosemary & oregano, stir in half the basil. Cook 30 seconds, stir in sieved tomatoes cook 5 minutes. Spoon zucchini mixture over fish. Sprinkle with breadcrumbs, lemon juice & remaining basil, 1 Tb. Butter, bake 10-15 minutes uncovered. |
