1/8 cup oil
4 salmon fillets, skin on
2-3 cloves garlic, grated
2 in. piece ginger root, grated
1 bunch scallions
1/4 cup soy sauce
1/4 cup sake
1/8 cup mirin
Dashi (fish broth) or chicken broth
pepper
1 pd. linguine, cooked. |
In sauté pan add salmon skin side down, rub with garlic and ginger. Mix remaining ingredients except broth. Pour half mixture over salmon. Cook over medium heat, covered 5 minutes. Turn salmon over(remove skin) add remaining liquid. If more liquid needed add 1/4 cup at a time of broth.
Pour liquid over linguine top with chunks of salmon. |
