  Black Bean Salsa

2 medium tomatoes -- chopped
1/2 red onion chopped
2 cloves of garlic -- minced
1 can of black beans
1 can of corn (I used white)
1 small bunch of cilantro -- about 1 cup loosely packed -- chopped
approximately 1/4 c. red bell pepper -- chopped
1 Tablespoon finely chopped jalapeno pepper (optional)

Dressing: Juice of 2 limes
1/2 olive oil
Put all ingredients in a large bowl, mix dressing and pour over salsa. Chill before serving.
