1/2 - 3/4 c. olive oil
1 c. onions minced
1/4 tsp. salt
2 tsp. basil
1 tsp. oregano
1 pd. fresh spinach, minced
4-6 cloves garlic, minced
black pepper
3 Tb. lemon juice
1 pd Phyllo dough
1/2 pd mozzarella grated
2 medium tomatoes - thinly sliced
1/2 c. kalamata olives
3/4 pd feta cheese

Preheat oven to 375*
Sauté onions and salt 8 minutes.
Add herbs and spinach cook until limb about 5-8 minutes.(until liquid is mostly gone.)
Take off heat, add garlic, pepper and lemon.
Brush cookie sheet with olive oil.
layer phyllo leaves, brushing with olive oil between every layer. Use the entire box.
Top in order:
Leave about 1/2 inch border around entire pan.
mozzarella is the first layer
Spinach mixture.
Tomatoes and kalamata olives,
Top with feta cheese.
Bake for 30 minutes. Cut as soon as it comes out of the oven. |
