4 teaspoons olive oil
Thin slices of French Bread
4 garlic cloves, halved
2 large ripe tomatoes, peeled, lightly seeded, and finely chopped. (Or just thinly sliced)
1/4 cup snipped fresh basil leaves
Coarse salt
Freshly ground black pepper |
Preheat oven to 450*
With a pastry brush paint on both sides of each bread slice with olive oil. Place the bread slices on a cookie sheet and bake for 10 minutes, or until crisp and golden.
Rub each bread slice with the cut side of a garlic half and arrange on a plate. (Discard garlic). Mix tomatoes and basil in a small bowl, season to taste with salt and pepper, spoon onto the bread slices, and serve.
Note: Some finely chopped purple onion is delicious added to the tomatoes. |
