Vegetable Broth
Celery
Onions
1 can diced tomatoes
2 fresh tomatoes (or another can)
1 can black-eyed peas
1 can white kidney beans
2 sliced potatoes
Kale or spinach
pepper and thyme |
Saute Celery and onions
Add vegetable broth, tomatoes, beans and seasonings. Simmer for about 30 minutes
Add the Potatoes simmer 15 more minutes or until potatoes are tender
Turn off soup and kale or spinach and let set for a few minutes.
