2 Tb. Olive oil
2 oz. bacon
1 onion
2 celery stalks
3 red potatoes
4 cups chicken broth
3 cups rice milk
3 cups corn
2 Tb. Flour
Salt and Pepper
Parsley |
Saute bacon in olive oil until crispy; add onions and celery sauté 5 minutes
Add red potatoes, and chicken broth simmer 15 minutes
Add rice, corn simmer for 20 minutes
Combine a little soup with flour and mix until smooth add to soup
Add salt, pepper and parsley
