2 c. beans, washed
Ham bone
onion
celery
S&P
bay leaf
1/2 c. tomato juice
1 potato
1 shredded carrot |
Wash beans, cover with water and cook 1 minute - cover - let sit 1 hour.
Add hambone, any chopped ham, and juice from baking the ham (about 1 1/2 c. ham juice). And about 2 qts water.
Add onions, celery, salt and pepper, bay leaf and simmer about 1 hour.
One hour before eating:
Add tomato juice, potato and shredded carrot.
Simmer till tender - mash a few of the beans & potatoes. Don't have exact amounts on onion and celery, depends on what you like. If you don't have any extra ham juice, a couple of bullion cubes(chicken) works. |
