1 md onion, chopped
2 garlic cloves, minced
2 Tb. oil
1/2 tsp paprika
1/4 tsp cayenne
2 potatoes, peeled and diced
8 cups chicken broth
2 1/2 cups chopped toms or 2 cans diced toms
1 can kidney beans
12 oz. sausage, cooked and diced
8 cups Kale

Saute onions and garlic until tender, add seasonings, potatoes and chicken broth simmer for about 15 minutes until the potatoes are tender. Mash potatoes with a potato masher. Add toms, beans, sausage and simmer for 45 minutes parsley covered. Add Kale and cook another 15-30 minutes. At the very end add some pepper. |
