  Vegetarian Chili

2 Tb. oil or just use a little water to saute veggies
1 medium onion, chopped
2-3 stalks celery, chopped
2-3 carrots, chopped
2 garlic cloves
2 cups kernel corn (i used 1 can)
2 (15oz) black beans, rinsed and drained
2 (15oz) kidney beans, rinsed and drained
2 (15oz) diced tomatoes, undrained
1 (10oz) rotel diced tomatoes with green chilies
1 cup salsa
1/2 cup ketchup
1 can veggie broth - find the consistency you like might need a bit more broth
1 Tb Worcestershire sauce
1 bag Taco seasonings
Instead of the bag of taco seasonings I added:
1 Tb. chili powder
1/2 tsp salt
1 tsp ground cumin
1 tsp oregano
1/2 tsp cayenne pepper
1/4 tsp paprika
saute veggies and rest ingredients bring to boil and then simmer for at least 1 hour.. Or if you don't want to pay attention toss it in the crock pot for the day!

Freezes great!
