4 lbs. pork spareribs, cut into serving-size pieces
10 cloves garlic, peeled
1 onion, chopped fine
1 Tb margarine
1 c each ketchup and water
6 Tb brown sugar
1/4 c chopped celery or 1 Tb celery salt
4 Tb lemon juice
2 Tb each vinegar and Worcestershire sauce
1 Tb ground mustard
1/4 tsp cayenne pepper
Place spareribs in baking pan with cover. Split 6 cloves garlic at the top to release flavor and sprinkle over ribs. Cover pan and bake at 350* for 1 hour. Pour off the grease.
Mince remaining 4 cloves garlic and fry with onions in margarine until onion is transparent, being careful not to burn garlic. Add all remaining ingredients and pour over the ribs evenly. Cover and bake at 350*, basting every 1/2 hour and checking with fork for doneness. May take up to 2 hours. Bake uncovered for the last 1/2 hour.
