Dried-Cherry Scones

Nonstick vegetable oil spray
1 ¼ c. all-purpose flour
3 T. sugar
1 ½ t. baking powder
¼ t. salt
6 T. (¾ stick) chilled unsalted butter, cut into ½-inch cubes
½ c. chopped dried tart cherries
1/3 c. buttermilk
1 large egg
2 t. vanilla extract
1 t. grated orange peel

Preheat oven to 400°. Spray baking sheet with nonstick spray. Mix flour, sugar, baking powder and salt in large bowl to blend. Add butter; rub in with fingertips until pea-size pieces form. Stir in cherries. Whisk buttermilk, egg, vanilla and orange peel in small bowl. Add egg mixture to flour mixture; stir just until dough forms.
Shape dough into 6-inch round on prepared sheet. Cut into eight wedges and space 1 ½ inches apart. Bake scones until golden, about 15 minutes.

Fun breakfast treat, substitute any number of things for the dried cherries: raisins, chocolate chips, etc.
