  Chicken Quesadillas

1/2 pound skinless, boneless chiken breast halves
Mexican seasonings
1 1/2 teaspoons vegetable oil
1 green bell peppers, chopped
1 red bell peppers, chopped
1/2 onion, chopped
5 flour tortillas
1/2 (8 ounce) package shredded Cheddar cheese
2 bacon slices, cooked and diced
1/2 (8 ounce) package shredded Monterey Jack cheese
Preheat broiler.

Cut the chicken into small cubes and cook under broiler, (or just saute it)

Preheat oven to 350*

Heat the oil in a large saucepan over medium heat. Saute the green bell peppers, red bell peppers, and onions add the chicken and Mexican seasonings. Slowly cook and stir for about 10 minutes.

Layer 1/2 of each tortilla with Cheddar cheese, chicken mixture and desired amount of bacon. Top with Monterey Jack. Fold the tortillas.

Bake in the preheated oven 10 minutes, or until the cheese has melted.
